Berry Chia Pudding
1/4 cup chia seeds
1⁄2 cup coconut milk
1/4 cup water or almond milk
1/4 tsp cinnamon
1 tbsp Xylitol
1/2 tsp vanilla extract
5-10 drops Stevia extract, optional
1/4-1/2 cup berries, fresh or frozen, chopped
1. Mix the chia seeds, coconut milk, water, cinnamon, Xylitol, vanilla
and stevia. If you prefer a smoother texture, place into a blender and
pulse until smooth.
2. Mix in the berries - you can use fresh or frozen.
3. Let it sit for at least 10-15 minutes, ideally overnight in the fridge.
