Coconut Marshmallows

Ingredients

400ml Coconut Cream

15g Gelatine

10g Monk Fruit Sweetener (or Xylitol)

Method

Heat coconut milk in saucepan until hot

Add gelatine and sweetener and whisk until combined

Pour into a mould lined with one whole piece of baking paper.

Set in fridge until firm (1-2hrs)

Once set, turn out onto a chopping board and cut into slices.

Store refridgerated.

Makes 12-15 marshmallows
